These are soft, gently sweet whole wheat rolls enriched with tahini, date syrup, and olive oil. They keep well and bring together the kind of everyday ingredients Uri returns to often: whole grains, sesame, dates, and good olive oil.

Estimated preparation time: about 2 hours, including rising.

Ingredients:

  • 13/4 cups water (415 ml)
  • 1 tablespoon whole sesame tahini (15 ml)
  • 3 teaspoons dry yeast
  • 3 tablespoons date syrup, or silan (45 ml)
  • 51/2 cups whole wheat flour (about 660 g)
  • 1/2 cup olive oil (120 ml)
  • 1 teaspoon salt

Instructions:

  1. In a mixing bowl, combine the water, yeast, date syrup, and 2 cups of the flour. Mix into a smooth sponge.
  2. Let the sponge stand for about 5 minutes, until bubbles appear.
  3. Add the tahini, olive oil, salt, and the remaining flour. Knead for about 10 minutes, until a smooth dough forms.
  4. Place the dough in an oiled bowl. Cover with a damp towel and let rise until doubled, about 30 minutes.
  5. Shape the dough into rolls and place them on a parchment-lined baking sheet.
  6. Let the rolls rise for another 30 minutes.
  7. Heat the oven to 375°F (190°C).
  8. Bake for 17 to 20 minutes, depending on the size of the rolls, until golden.
