A quick and simple dessert that is perfect for using up apples that might look less than perfect.

Ingredients

For the Apples:

  • 6 tart apples (such as Granny Smith), cored and diced

  • 1 tbsp ground cinnamon

  • 1 tbsp olive oil

For the Crumble:

  • 1/2 cup (70 g) raw almonds

  • 3 Medjool dates, pitted

  • 3 pieces (0.5 oz / 15 g) cacao paste (cacao mass)

  • Optional add-ins: 2 tbsp raisins, rolled oats, or shredded coconut

For Serving (Optional):

  • 1 tsp honey, grape molasses (dibis), fig molasses, or date syrup (silan)

  • 1 scoop high-quality vanilla ice cream

Instructions:

  1. Prep and Season the Apples Place the diced apples into a medium mixing bowl. Drizzle with 1 tablespoon of olive oil and sprinkle with 1 tablespoon of ground cinnamon. Toss thoroughly until every apple cube is evenly coated.

  2. Prepare the Crumble Place the almonds, pitted dates, and cacao paste into a blender or food processor. Pulse in short bursts until the ingredients are broken down into a uniform, coarse, sandy texture.

  3. Cook the Apples Choose one of the following two preparation methods:

    • Stove-top Method: Transfer the seasoned apples to a skillet. Sauté over medium heat for 6 minutes, stirring occasionally, until the apples soften slightly.

    • Oven Method: Preheat your oven to 350°F (180°C). Spread the seasoned apple cubes in a single layer on a baking sheet. Bake for 15 minutes, or until the apples reach your desired tenderness.

  4. Assemble and Serve Divide the warm, softened apples evenly into serving bowls. Top each bowl generously with the almond-date crumble. Finish with a drizzle of honey, grape molasses, or date syrup, or serve alongside a scoop of vanilla ice cream.
