This marble cake was created by our friend Shani Monin.

We asked Shani to create a simple stirred cake made with natural ingredients. This dairy version uses eggs, butter, silan, whole spelt flour, coffee, and cocoa. It is still a familiar marble cake, but with deeper flavor and simple, natural ingredients.

Ingredients:

  • 2 eggs
  • 6 tablespoons melted butter (90 g)
  • About 2/3 cup date syrup / silan (220 g)
  • 7 tablespoons water (105 ml)
  • About 3 tablespoons strong coffee, espresso, or moka pot coffee (40 ml)
  • 2 tablespoons apple cider vinegar, or any other vinegar you have at home
  • About 1 3/4 cups whole spelt flour (220 g)
  • 1/2 teaspoon baking soda
  • A pinch of salt
  • 2 tablespoons cocoa powder (16 g)

Instructions:

  1. Preheat the oven to 340 F (170 C).
  2. Mix all the wet ingredients together in a bowl: eggs, melted butter, silan, water, coffee, and vinegar.
  3. Add the dry ingredients, except for the cocoa, to the bowl: flour, baking soda, and salt. Mix briefly, just until the flour is incorporated into the batter.
  4. Pour two-thirds of the batter into the baking pan.
  5. Add the cocoa to the remaining third of the batter and mix briefly, just until the cocoa is incorporated and the batter turns brown.
  6. Pour the dark batter over the light batter in the pan.
  7. Using the handle of a spoon, a skewer, or any other comfortable tool, draw through the batter. First mix from bottom to top along the length of the pan, then make gentle swirls.
  8. Bake in the preheated oven for about 35 minutes, until a knife or toothpick comes out with moist crumbs.

Variations

  • You can replace the water with a natural juice you like, such as apple or orange juice. It will add sweetness.
  • If you do not like coffee, leave it out and replace the 3 tablespoons (40 ml) with water or juice.
  • You can replace the silan with another sweetener, such as honey or apple juice concentrate.
  • You can replace the butter with nut butter for extra flavor, or with olive oil.
  • If you love spices, you can replace the cocoa with spices you like. Shani recommends trying a blend such as cinnamon, nutmeg, vanilla, clove, cardamom, and anise.
