Kabocha squash is valued for its low water content and high starch density. This recipe uses roasting to break down these complex starches into simpler sugars, concentrating the flavor without the need for added sweeteners. The addition of ginger and cinnamon serves a functional purpose, providing the warmth necessary to aid the digestion of dense, starchy vegetables.

Ingredients:

1 Medium Kabocha Squash, halved and deseeded
1 Large Onion, roughly chopped
1 teaspoon Cinnamon
1 teaspoon Fresh Ginger, grated
1 liter Vegetable Stock or Water
Olive Oil
Sea Salt and Black Pepper
Lightly toasted pumpkin seeds for serving

Instructions:

    1. Roasting: Preheat the oven to 200°C or 400°F. Coat the halved squash in a thin layer of olive oil and roast for 30 minutes. Roasting is essential for this variety as it intensifies the biological sweetness and creates a creamier texture.

    2. Separation: Once the squash is tender, use a spoon to separate the flesh from the tough outer skin. Discard the skin and set the flesh aside.

    3. Sautéing: In a heavy bottomed pot, warm a small amount of olive oil over medium heat. Sauté the onion until it is translucent.

    4. Spicing: Add the cinnamon and grated ginger to the onions and stir for thirty seconds. This short exposure to heat releases the volatile oils within the spices.

    5. Combining: Add the roasted squash flesh and the vegetable stock or water. Bring the mixture to a boil and then immediately reduce the heat to a low simmer.

    6. Simmering: Cover the pot and simmer for one hour. This allows the fibers to soften completely, ensuring the nutrients are accessible to the gut.

    7. Milling: Use an immersion blender to mill the soup until it reaches a smooth, velvety texture. Season with salt and pepper to taste.
