A local za’atar blend built around dried hyssop, bright sumac, toasted sesame, and sea salt. Use it as a finishing spice for cooked dishes, vegetables, eggs, labaneh, or sandwiches. A little olive oil turns it into a spoonable seasoning paste.

Ingredients:

  • 1 cup dried hyssop or za’atar leaves (about 25 g)
  • 1/4 cup sumac (about 25 g)
  • 1/2 cup sesame seeds (about 75 g)
  • 1 teaspoon natural sea salt (6 g)

Instructions:

  1. Combine the dried hyssop, sumac, sesame seeds, and salt.
  2. Use as a spice blend over cooked dishes, vegetables, eggs, labaneh, or sandwiches.
  3. For a richer flavor and appearance, stir in a little olive oil just before serving.
